THE INGREDIENTS

The finest food can't be made without the finest ingredients. That's why we use fresh, natural, high-quality, mostly non-GMO ingredients to create the ideal Neapolitan Pizza. We meet rigorous gastronomic rules to serve authentic Neapolitan Pizza famously known for its chewy, crisp dough and topped with all-natural ingredients. 

 

Staying true to Neapolitan heritage, our dough is made with only four fine ingredients –

non-GMO double zero flour imported from Naples, pure water, sea salt and live yeast. The authentic and pure garnishes include – crushed non-GMO Italian peeled tomatoes, fresh whole mozzarella and non-GMO, Italian extra virgin cold-pressed olive oil.

00 Neapolitan Flour

Made by an authentic Italian family company for 3 generations, MidiCi’s Caputo “00” flour is ideal for pizza dough for two reasons: one, it’s finely ground, and two, it has a lower gluten content than most flours. The “00” refers to the texture of the flour: Italian flours are classified by numbers according to how finely they are ground, from the roughest ground “tipo” 1, to 0, and the finest 00.

Italian Tomatoes

Cultivated in the region of Campania, close to the sea and Mount Vesuvius, they are blessed with rich soil and bathed in the Mediterranean climate which together create a superb and unique environment for growing tomatoes. Italian peeled tomatoes are thin-walled, not too sweet, with a thick, tasty, less acidic pulp, and contain fewer seeds and less water than other tomatoes – making them the best in the world for sauces. For these reasons, the only sauce allowed on an authentic Neapolitan Pizza is made with crushed Italian peeled tomatoes.

Proscuitto Di San Daniele

Prosciutto di San Daniele is produced only in the Friuli Venezia Giulia region in the hilly area around the town of San Daniele in the province of Udine, in the extreme north-eastern part of Italy. Recognizable by its Consortium brand, Prosciutto di San Daniele is made solely of the meat of pigs born and bred in Italy and Italian sea salt.

Extra Virgin Olive Oil

Olive oil is the cornerstone of the Mediterranean diet, an essential nutritional mainstay for the world’s longest-living cultures. Many health-promoting effects of the Mediterranean diet have been attributed to olive oil consumption. Our olive oil is authentic, extra virgin, cold-pressed and non-GMO.

Mozzarella

Made from fresh, local milk gathered only a few hours after milking, our fresh mozzarella begins with quality ingredients and care. The result is a delicate, clean-flavored fresh mozzarella with a soft, porcelain white appearance.

Parmigiano-Reggiano

Essential for many Italian dishes, Parmigiano-Reggiano is still hand-made without any additives, just as it was nine centuries ago.
Parmigiano-Reggiano’s origins date back to the 12th century and since that time, artisan makers have stayed faithful to the identity and unique natural production of this iconic cheese. The minimum maturation time for Parmigiano-Reggiano is 12 months, but when the cheese reaches approximately 24 months of age, it is at its best.

 

Parmigiano-Reggiano is a mature, nutritious cheese with a rich, fruity flavor and a flaky and slightly grainy texture.
